This is How Jesus Fulfilled the Law
When Jesus said He came to fulfill the law he meant that He lived His life as a Jew from the line of Judah/Levite Jews (the Hebrew Priest class). As a Levite Jew, He was required to keep all 613 laws of the Old Testament of the Bible and He was able to do that because He was given the Holy Spirit from His Heavenly Father. Because Jesus internalized all 613 laws of the Old Testament we, the Christians that follow after Jesus, do not have to follow these 613 laws because it is virtually impossible to do so unless we are Jesus Himself. Jesus had been given special powers by the Heavenly Father to do so.

Bible Verse Saying Jesus Fulfilled the Law
When Jesus died He said in Luke 23:46 "My God, my God, why hast thou forsaken me? I thirst. It is finished. Father, into thy hands I commend my spirit." When Jesus said "It is finished" He meant He fulfilled the Law and then died for the sins of mankind.
Personal Choices of OT Law-Keeping
On the other hand, if a Christian wants to keep one or two of the Old Testament laws that are not the 10 Commandments, then it should be ok to do so. If a person does not want to eat pork or does not want to eat meat at all (which is not required in the Bible) that is a personal choice. But as I said, to keep all 613 Laws of the OT is impossible and is not required. As long as one knows this then one can say "I don't eat meat because it is a personal choice and not because of what the Bible says to do. I say this because many say that if you want to keep one OT law then you have to keep all of them.
James 2:9-10 Explained
This is an example of the last sentence: James 2:9-10 New King James Version (NKJV) "but if you show partiality, you commit sin, and are convicted by the law as transgressors. For whoever shall keep the whole law, and yet stumble in one point, is guilty of all. So as you can see this means you are only guilty if you keep the whole law not if you want to keep one of them for personal reasons which would be a righteous quest. It is also saying that it is impossible to keep the whole law and only Jesus was able to do that. I hope this clears things up.Note
